While Tres de Mayo may hold a special appeal to me (it was the day I met my husband),
Cinco de Mayo and all the flavor that comes along with it is right up
there as one of my favorite food holidays. A love for tangy lime is
something that I've passed down to Liv, and as early as the tender age
of 3 she could be heard asking for Margarita Chicken or Margarita Lime
Cheesecake.
Today
we eat Cinco de Mayo-like nearly all year around, but if you are
looking for something special for your weekend Fiesta, we thought we'd
leave you with a few of our favorites.
Liv's favorite
Oft requested, this is one of those
desserts that ranks up there with our all time favorites. A staple for
summer picnics or a bright treat in mid winter, it is worthy of any
special occasion.
This
is one of those wonderfully forgiving recipes that becomes a different
yet similar version every time you make it based on the ingredients you
have on hand. Don't like some of the listed veggies? Substitute your
favorites. We have also substituted Cannellini Beans in place of the
Black Beans. Not quite as pretty, but still tastes wonderful.
Tart
and potent, these jiggly cubes of margarita go down easy, especially
when dipped into a sweet lime sugar that brings a definite "Pow" to the
senses when popped into your mouth.
The berries were adorable on the table and garnered "Ooohs and Aaahh's" from the crowd.

ReplyDeleteI would enjoy any of these dishes any time of year. The cornbread looks especially enticing right now but who am I kidding--if your dishes were all served on one table, I might dive into the strawberry margarita jello shots first! :)
