Ahhh... Thanksgiving! A day to give thanks for the bounty we have received and a day of abundance. Occasionally, and hopefully said abundance will lead to a day of leftovers, which in my opinion is actually one of the best part of the Thanksgiving meal. Who doesn't love rummaging through the fridge finding turkey, cranberries, sweet potatoes, mashed potatoes and slices of assorted pies all at your fingertips?
Occasionally, however, the plethora of leftovers might become a bit daunting and we're here to recommend a wonderful use for some of that extra Cranberry Sauce (we highly recommend our Grand Marnier Cranberry Sauce if you are looking for a recipe). If you don't need all of your sauce to slather onto that Day After Thanksgiving Turkey Sandwich, you can look like a gourmet chef with these cute little Cranberry Kisses.
Our favorite version uses goat cheese, or chévre, but a luscious brie is a fine substitute. Served warm, these little kisses are just one more thing to be thankful for.
Goat Cheese Cranberry Kisses
A wonderful way to use leftover cranberry sauce, or a delightful appetizer to celebrate Christmas or New Years!

Puff Pastry, thawed in fridge overnight
Goat Cheese, Chévre (or Brie)
Cranberry Sauce
Preheat oven to 375º F.
Spray the cups of a mini muffin pan with cooking spray. Roll puff pastry according to package directions. Cut pastry into square large enough to fill a mini muffin cup. Scoop about 1 tsp of cheese into each pastry lined cup and top with a dollop of cranberry sauce.
Place muffin tin into the oven and bake about 18 minutes, rotating at about 10 minutes and checking again at about 15 minutes. Bake until puffs are lightly browned and sauce is "melty". Remove from oven and remove puffs from the muffin tin onto a serving plate. Serve immediately, and enjoy!

I have no idea as to how I missed this post last year, but am I thankful I won't be missing it THIS year. My word these are scrumptious looking appetizers! I've yet to click over to the GM Cranberry Sauce recipe, but I've been making one for many years (it includes a shot for the chef). Either way, now I've got a delightful way to use the sauce up.
